It helps if you mention which iPhone you have, which iOS version, and what you did just before the problem appeared.
Tap the transaction to edit it. Speech recognition is Apple's, and it does better in a quiet room and with amounts said plainly, like "twelve euros fifty".
The dashboard shows spending by default. Switch the filter at the top of the list to see income.
Open Budgets, pick the budget, and tap Share. You get a link to send. Anyone with that link can join and see the whole budget, so only send it to people you want in it.
In the same Manage screen you can remove a member, which also refreshes the invite link so the old one stops working. If you want to hand the budget to someone else, use the menu next to their name and choose Make owner.
Settings, then Export CSV. You get a file you can open in any spreadsheet.
Settings, then Delete account, at the bottom. It only appears if you have an account, which happens only if you have shared or joined a budget. If you own a budget other people are still in, hand it over first.
